Cut & Craft, Manchester
We were very pleased to be appointed as the kitchen ventilation specialists during the development of the Cut & Craft steak restaurant located in a magnificent Grade II listed building in the heart of Manchester. The ornate building was originally designed by Mancunian architect, Edward Walters and is a fine example of palazzo-style architecture.


The style of the building proved to have its constraints; the canopy and ductwork within the kitchen had to be supported on the kitchen pod and due to there being no access to the lift nor the possibility for using a crane due to the site location, all the ductwork had to be taken to site flat-pack and all fans needed to be dismantled and everything then had to assembled in the sixth floor plant room. It's fair to say our Installation teams had a good workout on this project!
We made sure the system was as energy-efficient as possible through the use of EC fans, along with an energy saving gas interlock system.
UV filtration was used on this project, given the cooking equipment involved. As well as standard catering equipment such as fryers, griddles and ovens, being a steak restaurant means that the cookline also includes multiple open grills, causing a high level of grease and odours emitting into the atmosphere. The combination of the UV-C light and ozone in the UV system reacts with the grease and odours to produce carbon dioxide, water vapour and polymerised grease. This in turn ensures cleaner ducting, which minimises the risk of fire when cooking and also means the extract fan will run more efficiently.
As well as this, we also designed a bespoke service spine which incorporates shelving that can be interchanged from both sides of the cooking island.
